Ethiopia Shakisso Birbisa

This coffee grows under indigenous shade trees. Farmers harvest and deliver only fully ripened cherries to the collection center/drying station located in the Shakisso region. When coffee gets to the drying station it is once more checked for only fully ripe cherries. Coffee is immediately put out onto raised African beds while still fresh to protect proper fermentation. When coffee reaches the desired humidity, it is placed into jute bags where it rests for a minimum of one month. This rest helps the flavour settle and contributes to the overall quality of the cup.
