Mr. Mac & Berhanu have consistently produced great coffees from the start. Their perfectionist tendencies have allowed them to improve their station's processing techniques year after year continuously. Mr. Mac spends much of his time training farmers and aiding in the development of farms around the washing station. His immense efforts to improve farming and processing practices are evident in this year's natural processed coffee. Its elegant rhubarb-like sweetness and balanced flavours. It’s a very versatile coffee. This producer is targeting the highest quality grades there is, grade 1. They have site collectors in the local villages carefully selecting the ripe cherries with better qualities, as well as the nearby farmers deliver cherries to the mill. The cherries are hand sorted for unripe and over-ripe cherries to get a sweeter and cleaner product. Natural coffee is normally processed in the later part of the harvest, and that’s when the harvest is peaking at the higher altitudes. Once arrive at the station, the cherries are sorted before drying. During the drying process, the cherries are laid out in thin layers on the tables to avoid over-fermented flavours. This process takes about 15 days. Cherries are constantly moved during the daytime and rest mid-day and at night. The resulting coffee from this station is clean, incredibly sweet, and complex. This coffee is very bright and floral, a perfect fit for all milk beverages and exquisite espresso lovers.
