The Story
The town of Buesaco lies on a ridge high in the Andes mountains of the Nariño department. The name Buesaco Jardines translates to "Buesaco Gardens" and refers to the lush gardens that are present in coffee farms in this area. This blend is our way of creating larger, more manageable lot sizes from some of our favourite farms in Buesaco. This season we chose 3 farms to contribute to this blend and are very pleased with their results. The high elevation and diverse microclimate also contributes to the complexity of this coffee blend. Farmers here work very diligently, carefully selecting only the ripest fruits for production. Cherries are fermented for 24 hours after harvest, and for another 18 hours after being depulped. The coffee is then fully washed with spring water and dried for 20 days on a raised patio.
