Bella Alejandría Bella Alejandría sits in Huila, the mountainous heart of Colombia’s specialty-coffee south. It’s the farm of Wilder Lazo, who came to coffee by an unusual route — trained as a cattle geneticist before returning to his family’s land. That background shows in how he works: the same instinct for careful selection and controlled variables that guides livestock breeding now runs through everything he does with coffee, from the trees he plants to the way each lot is fermented. The farm’s coffee grows between 1,890 and 2,100 metres, high enough that the cherries ripen slowly and develop the concentration the variety is known for.

The Marageisha Variety Marageisha is a natural cross between Maragogype — the giant-beaned “elephant” mutation of Typica — and Geisha, the famously floral variety that reshaped specialty coffee.
