Colombia Yeny Pinchao Washed

About the producer: This lot is part of the Quitupamba small producers’ series, a group made up of young farmers who are motivated to produce specialty coffee. Through the efforts of CO-OP Especiales, this area is finally being highlighted for the potential of producing high scoring specialty coffee. This is the second year Yeny's coffee is separated as a micro-lot and it continues to be a great example of a terroir-driven, minimal intervention coffee with a sweet, clean, and juicy profile.  Process: Upon harvest, ripe cherries are carefully selected for processing. The cherries are washed and soaked in water to remove floaters and impurities. Remaining cherries are depulped and left to ferment in clean tanks for 16 hours before being moved to patios to dry for another period of 10 days under the sun.
