It’s more challenging to unlock the full flavour potential of a coffee when it’s freshly roasted. The roasting process creates stored CO2 inside the coffee cells. This CO2 will slow release over time, often referred to as degassing. The one-way valves on coffee bags are designed to allow these gasses to be released without allowing oxygen in.
You will be able to get more flavour out of your coffee if you allow it to degas in the sealed bag.
We recommend at least a week. The optimal timing for enjoying a coffee can differ dramatically. Let us know what you like. And yes, we know it’s really hard to not open up that new bag of coffee you just got.
Yes. Its flavour potential can start to decline around the 2 month mark. The enemies of coffee are oxygen, energy and humidity. Keep your bag of beans sealed or use an airtight container. Avoid direct sunlight and high temperatures, their energy will increase the speed of coffee's decline. The fridge and freezer are humid environments that can transfer unwanted flavours into your coffee.
If you come into our coffee shop, we’ll be more than happy to grind your coffee for you. You may notice that we could be hesitant or recommend that you only grind a small amount at a time. This is due to the fact that we understand your coffee’s flavour potential will start to deteriorate immediately and at a much faster rate. Investing in a grinder is the best way to get the best value out of yourcoffee.
