Finca La Hermosa is a specialty coffee farm that blends tradition with innovation, all while positively impacting the local community. Owned by Max Perez, a fourth-generation coffee grower from Huehuetenango, the farm was transformed eleven years ago when Max and his partner acquired an abandoned property. They undertook extensive renovations, including uprooting old plants, plowing the fields, planting shade trees, and building a water mill. Max chose the Acatenango region for its ideal conditions, characterized by mineral-rich soils and the stunning backdrop of two volcanoes. At La Hermosa, coffee is hand-picked at the precise ripeness of 21°Bx and processed on the same day to prevent uncontrolled fermentation and undesirable flavors. The farm utilizes a unique method of removing mucilage through fermentation rather than mechanical means, ensuring water efficiency by recycling water used in the depulping and washing processes.
