Colombia Arnaldo Guzman Pink Bourbon Double Fermented Washed

Arnaldo Guzman has been a coffee producer for the last 30 years. His eight-hectare farm, La Alejandra, is located in the township of Quebradon, at an elevation of 1,800 m.a.s.l. Three hectares are currently producing coffee, each planted with approximately 5,500 Pink Bourbon and 2,800 Gesha trees. Arnaldo is also in the process of renewing his Catimor plantation as he works toward his goal of producing only specialty coffee. Besides coffee, Arnaldo and his family also grow avocados and keep one and a half hectares in a protected forest reserve. During the height of the harvest, Arnaldo and his pickers hold a daily pre-harvest meeting to make sure everyone knows the exact level of maturity of the cherries to be picked that day.


THE PROCESS
This washed Pink Bourbon micro lot was first dry fermented with the cherries intact in plastic bags for 72 hours, de-pulped, then further fermented in the same manner for another 72 hours, after which it was rinsed and put out to dry on parabolic-style greenhouse solar dryers with raised beds inside for a period of 10 to 30 days.
