VINKA

Vinka is a specialty coffee farm in the southern Ecuadorian Andes at the ecotone between cloud forest and dry montane shrubland. The resulting microclimate features pronounced diurnal shifts in humidity, which favor cultivation of the Sidra varietal. Implemented soil-restoration and biodiversity-enhancement measures have improved soil functionality and coffee quality, demonstrating sustainable management practices compatible with productive coffee monoculture.


MOSTO PROCESS

The Mosto — a concentrated fermented juice made by pre-fermenting a small batch of ripe cherries or pulped coffee in a jar — is diluted and introduced into the main fermentation tank to seed the process with desirable microbes; this Mosto‑processing technique lets producers steer fermentation more precisely, so that, when combined with careful pH and temperature control, the beans develop brighter fruit notes, greater sweetness, and a more layered, complex cup.
