This lot was produced by the Gubeta Farmers’ Group in collaboration with Ture Waji and his company, Sookoo Coffee, a prominent producer and exporter of organic specialty coffee. Hand-harvested cherries from the Gubeta Farmers’ Group are delivered to the washing station at Gubeta Farm in East Guji, Shakiso woreda, where the cherries are sorted and spread on raised beds for drying, a process that takes 2-3 weeks and involves frequent raking for consistency. Farming methods in Guji are primarily traditional, with most farms being organic by default and few mechanized steps during processing. Coffee is typically intercropped with beans, peas, and enset, a wild African banana relative used in porridge and bread. Over the past decade, Guji has gained recognition as a distinct coffee origin, separate from its neighbors Sidamo and Yirgacheffe, thanks to its rugged terrain, warm days, and cool nights that contribute to its unique flavor profiles and exceptional quality.
