About the Coffee
This naturally processed Geisha comes from Emmanuel Solis, a skilled producer in Costa Rica’s Tarrazú region. His farm, Las Margaritas, is located in the mountainous town of Santa Maria De Dota, where the high elevation allows beans to ripen slowly, enhancing their complexity and depth.
The Geisha plants on Emmanuel’s farm are in their fifth year, reaching peak flavor potential. By carefully managing the number of cherries per branch, he ensures each cherry receives optimal nutrients, bringing out the full character of this exceptional variety.
Processing Method
Emmanuel’s dedication extends to the meticulous processing of the cherries. Using raised African beds, the cherries are spread no more than five deep to allow for slow but steady fermentation. Over 18-22 days, the cherries dry fully before being hulled to reveal the high-quality green beans that showcase their unique terroir and careful preparation.
