The Cabildo Aponte of Nariño represents one of Colombia’s most resilient and culturally rich Indigenous communities. Descended from Quechua-speaking peoples brought to the region during the Inca expansion, the Inga have preserved their language, traditions, and spiritual worldview across centuries of colonization and conflict.

ANDRES MARTINEZ
Andrés Martinez is a young Colombian coffee producer and biochemical engineer whose deep roots in coffee growing have inspired his career in the specialty coffee industry. With experience in soil research and process standardization, he brings a scientific approach to coffee production.
Today, Andrés leads his own project, managing two farms in Cauca, Colombia: Inza and El Sendero. He cultivates exceptional varieties such as Geisha, Chiroso, Papayo, Pink Bourbon, and Sidra, with elevation ranges from 1,750 to 2,000 MASL. His mission is to deliver consistent, high-quality coffees to international markets. To achieve this, he has established cherry collection centers in Nariño and Cauca, enabling standardized processing, scalable volumes, and lasting partnerships with his clients.

PROCESS
Andrés achieves this cup profile by fermenting the whole cherries for 48 hours, then depulping and fermenting them again for another 24 hours.
