In 1995, the Bayter Family began their agricultural journey at El Vergel farm, focusing on avocados. Between 2009 and 2010, Martha Bayter diversified crops by introducing coffee varieties like catimore and caturra. The family's interest in coffee grew, and with guidance from Nelson Moya, they explored pulping and fermentation. By 2014-2015, they certified their farm as "Rainforest" and sought specialty Colombian coffees. In 2016, expert Miguel Jimenez helped them plant varieties such as Geisha and Pacamara, with first productions in 2017. The farm modernized, introducing natural coffee processes and storage silos by 2018. The Bayters became pioneers in quality and innovation, researching bacteria and yeasts for fermentation. Today, El Vergel boasts over 28 varietals and is the first Colombian farm to implement the Koji fermentation process, revolutionizing green coffee development.
