THE FARM Las Margaritas is a family-run farm located in the picturesque mountain town of Santa Maria de Dota in south-central Costa Rica. Founded in 2013 by producer Emmanuel Solis, the farm is dedicated to cultivating exceptional cup profiles while adhering to sustainable practices, including a complete commitment to avoiding herbicides.
PROCESSING Ripe red cherries are meticulously hand-selected and sorted before being processed using the honey method, which retains the mucilage during depulping. Following this, the coffee is carefully dried on raised African beds for approximately 18 to 22 days, depending on the prevailing weather conditions.
