Finca Santa Matilda, located in Concepción de Ataco in Ahuachapan within the Apaneca-Ilamatepec mountain range, is one of the first farms in the region to grow specialty coffee, a tradition begun by the Ariz-Herrera family in 1875. This fifth-generation coffee producer has been committed to sustainability and social responsibility, creating employment opportunities for over a century. The family is also a founding member of FUNDATACO, established in 1991 to support local children in soccer and education. Coffee from Santa Matilda is partially processed at Germania, the farm’s mill, featuring depulpers and drying facilities, with beans sun-dried on raised beds for up to 25 days. Some coffees are dried on the clay patio at El Carmens, allowing for faster drying. Santa Matilda has received accolades, including top placements in the El Salvador Cup of Excellence in 2018 and 2019, reflecting their dedication to quality and community innovation.
